Purple Carrots

We recently read that vegetables that have dark rich colours are especially good for you. Brocoli, red peppers, sweet potato and beetroot to name a few. With this in mind, my husband picked up some purple carrots. I had never seen them before so we thought we would try them out. They have similar colouring to beetroot but taste just like carrots. Shocking, I know. :)



So I cut them up along with some sweet potato, tossed them in olive oil, salt and pepper and put them in the oven along with corn on the cob and seasoned chicken.



The purple carrots turned out beautiful and were very tasty. I definitly would give them a try!

Looks yummy! We grow purple carrots in our garden and I didn't know about them until Gary showed me last year:)
